Claude Troisgros, French born scion of the great Troisgros family is in charge of the kitchen. His French techniques and tropical ingredients render in such delights as Big Ravioli filled with taro root Mousseline, white truffel oil and mushroom Cappucino, his signature dish, Mercu Cajou, a fillet of Sea Bass in a Brown Sauce with Cashew Nuts, and for dessert Crepe Passion, a Passion Fruit Crepe Souffle.
